This is one cake that I love to make it is a perfect celebration cake and one thats perfect just for a dessert. It's so naughty though so much chocolate its sinful! I hope you enjoy!
175g Caster Sugar
3 Beaten Eggs
150g Self Raising flour
1/2 tsp Baking Powder
3tbsp Cocoa Powder
100g Milk Chocolate
350g Icing Sugar
Chocolatey Fudgey Topping:
75g Granulated Sugar
150ml Evaporated Milk
75g Milk Chocolate (roughly chopped)
40g Unsalted Butter
First of all collect together all of your ingredients
First of all I make my fudge filling since it needs to get thicker and such because if you put it straight into the cake after leaving it a few minutes to cool it'll take pieces of the cake off when trying to spread it. So to make you fudge filling you need to break the chocolate into a heat proof bowl and add the water and butter. Put the bowl over a saucepan of simmering water until the chocolate and butter has melted. Keep giving it a stir.
Once it has all melted leave it to stand over the warm water for a minute or two, now its cooled down some pour it into a bigger bowl and sieve in the icing sugar. Now beat it until it is smooth and thick.
Now this is done place the fudge in the fridge for a while to harden up whilst you make your cake.
First of all cream the butter and sugar together in a bowl until the mixture is light and fluffy. (these photos are purely to show you what it should look like, take no notice of how much mix I have since I doubled my mix and made two cakes when these photos were took.)
Once the sugar and butter is creamed gradually add the 3 beaten eggs to the mixture.
Once they have been fully beaten in pre-heat your oven to 180 degrees c. You now need to start sieving the flour, cocoa powder and baking powder into the bowl. Once in the bowl fold them into the creamed mix.
Once this is done and you have an even coloured mix distribute the mix evenly into your greased cake tins and pop them in the oven to bake for 20-25 minutes or until the cake is firm.
Whilst the cakes are cooking you can make your topping for the cakes since it needs to be chilled for an hour or two. To make the topping gently heat the sugar and evaporated milk in a small saucepan stirring it frequently until the sugar is dissolved. Bring the mixture to the boil and then simmer for 6 minutes without stirring it.
Remove the mix from heat and add the chocolate and butter and stir until it is melted and blended.
Once this is done pour the mix into a bowl and put into the fridge for 1-2 hours or until it is thickened.
After all of this and your cake is cooled spread the fudge filling between your cake and coat the top layer in the chocolatey fudgey topping. and volia you have a naughty chocolate fudge cake.
I suggest putting it in the microwave for around 30-40seconds until the fudge has melted and then serve with cream or icecream!Enjoy.
