So I forgot to take a photo of all my ingredients oops but oh well. You guys will love this recipe, I made these cupcakes for John for doing well in his first round of an interview I'm keeping my lips sealed on this for now though. Anyway these cakes were super scrummy so I thought I'd share.
What you'll need;
For the Cakes
A basic Yellow cake batter like a sponge cake mix either store bought or homemade
2 x Malteser chocolate drink packets
Half a box of Maltesers
For the Frosting
1.5 Box of Maltesers
200g Icing Sugar
Once you've made your normal cake mix up add the two sachets of the Malteser drinking chocolate to your mix and whisk until it has disappeared. I was worried I hadn't mixed my flour properly because the drinking chocolate has pieces of Honeycomb in it haha.
Once this is mixed begin to fold half a box of the Maltesers in and if you find a way to stop them for floating/rising to the top please let me know!
Spoon your mix equally into your cake cases and watch as no matter how much mix you put in the maltesers rise straight up to the top of the mix!Place the cakes in your oven at around 180 degrees c and bake for 20-25 minutes or until you stick a needle in (we use knitting needles) the middle to check the mix is baked.
To make the frosting mix the butter and icing sugar together to make buttercream.Take 24 Maltesers to the side and put the rest into a freezer/zip lock bag and bash it with a rolling pin to break them into pieces like you're making a cheesecake base.
Pour the pieces of Maltesers into the Buttercream.
Once your cakes are cooled you can frost them and place two Maltesers on the top.Pop in the fridge or a cool place for a few hours then serve.
I know how disgusting my baking tray is but I lost my new clean one and didn't have time to clean this one full before baking the cakes! so please don't judge me.
