Strawberry Cheesecake Cupcakes Recipe


So I'm finally getting around to sharing this amazing recipe with you all! I'm sorry I promised it on Wednesday, I've had a few people ask where it's at, I'm sorry I played Sims 3 all day instead! I'm a bad person haha. These cupcakes were a right treat in our house they went so quickly! They are pretty messy to eat so you need a fork 'cause they have strawberry in the bottom but personally I didn't see the point in that 'cause it just made them have soggy bottoms! Haha. Anyway I'm sure you all want to know how to make these beauties! (I found the recipe in one of my books and I can't remember which and I'm too lazy to search through them so you can buy the book but it was probably the hummingbird bakery one, which has a million amazing recipes if you're looking for a new recipe book ;) ).

The recipe makes 12 cupcakes which is no where near enough
What do you need? 
For the cakes -
120g plain flour
140g caster sugar
1.5 tsp baking powder
A pinch of salt
40g unsalted butter, room temp is best
120ml whole milk
0.5 tsp vanilla extract
1 egg
6 large strawberries chopped
200g of digestive biscuits
For the frosting-
300g icing sugar, sieve it!
20g unsalted room temp butter
125g cream cheese, make sure it's cold tho

So how do I make these delicious looking cakes? 
1. You want to whack your oven on about 170, then pop your flour, sugar, baking powder, salt and butter (the 40gs) in a bowl and beat them together slowly until you get a sort of sandy consistency and everything has combined nicely
2. Pour in your milk and vanilla extract and beat it on a medium speed until everything is well mixed, add your egg and beat it until you're sure everything is mixed all nice and together.
3. Divide up your chopped up strawberries between your cake cases and spoon in the cupcake mix over the top (you don't have to put strawberries in if you don't want all I found was that I had soggy bottoms and sort of jam all over my cupcake but they still tastes amazing.) Whack these in the oven for 20-25/when they look a golden brown and you can poke a skewer in and it'll come away clean/
4. After leaving your cupcakes to cool you can make your frosting and this is the best bit to be fair, you need to beat your icing sugar and your butter together. Add your cream cheese o this mix but make sure not to over mix it, you want it nice light and fluffy.
5. Smash your digestive biscuits to tiny little crumbs.
6. Frost your cakes however you fancy with your cream cheese frosting, sprinkle some biscuit crumbs on and half a strawberry and eat them until your heart's content. 

The only problem I found was that the cakes were heavy, this is probably due to the milk and the fact you have to keep them in the fridge, but sometimes heavy cake is what you need. These do taste amazing though I really think everyone needs to make Cheesecake Cupcakes because whoever decided to mix the two was a genius.
