Cinnamon Swirl Cupcakes Recipe

Cinnamon Swirls are one of my favourite things in life so when I stumbled upon a recipe for Cinnamon Swirl cupcakes on pinterest I knew I had to make them. I've edited the recipe I found as it was an American one and the cinnamon sugar was no were near as cinnamony as I like. Anyway these are my new favourite thing, they taste just like cinnamon rolls but have all the fluffiness of cupcakes!
What you need; 
For the cake; I made a standard cake mix using;
4 oz of self raising flour
4 oz of caster
4 oz of stork
2 medium eggs
For the cinnamon sugar swirl 
1 stick of butter (I had no idea what a stick meant so I used what was about 1 cup of butter
1/2 cup of soft brown sugar
1, 1/4 tbps of normal sugar
2 tsp of ground cinnamon
For the icing

3 cups icing sugar
2 tbsp maple syrup
2 tbsp water
Set your oven to about 180 degrees.
Make up your standard cake mix by creaming together the butter and sugar, before adding each egg separately and beating them in. Sieve the flour in and fold until the mixture is smooth.
Fill each cupcake case half full with cake mix and make your cinnamon sugar.
To make the cinnamon sugar melt the butter in the microwave before adding the dry ingredients mix it all together to form a cinnamon sugar paste/mix.
Spoon about a quarter of a teaspoon of the cinnamon sugar mix into each cupcake mix, and swirl using a tooth pick.
Spoon more cake mix on top until the case is 3/4 full and add a little of the left over cinnamon sugar and swirl again using a tooth pick.
Pop them in the oven for around 20 minutes.
I thought I'd slightly over cooked mine but the cupcakes were soft and fluffy with a crunchy top due to the cinnamon sugar which is exactly what I'd hoped. Leave them to cool for about an hour.
To make the icing add all the ingredients to a bowl and mix until smooth. Add more or less icing, water and maple syrup for your taste.
Poke holes into the top of the cupcakes using a tooth pick.
Drizzle the icing over the top of the cupcakes until you have the desired amount.
Now you can demolish them with a nice cuppa!
