Shortbread is one of my all time favourite biscuits, it's crunchy and crumbly, buttery and you pretty much just end up eating an entire pack before you know it! It also makes a really good gift for Christmas, I tend to try and bake some gifts for family members at Christmas because handmade gifts always seem so cute. Plus everyone loves baked goods! This year I'm attempting to make a hamper filled with biscuits, cakes and jams! At the top of my list was shortbread and here is my favourite recipe to follow taken from the absolute babe that is Paul Hollywood, I swear it's the best one out there. You really need to try it! The recipe takes around an hour and a half to carry out and makes 20 big short bread pieces but I made mine quite small so got a whole lot more.
What you need
225g unsalted softened butter
110g caster sugar
225g plain flour
pinch of salt
Christmas cookie cutters!
How you do it
1. Line your baking tray with some grease proof paper.
2. Put your butter and sugar into a bowl and cream together, I used an electric whisk for this as it was easier. Do so until it's super light and fluffy.
3. Sift in your flour and cornflour, add the salt too and mix until it is combined. This should start to look like a dough. You should tip the mixture onto a floured surface and knead it until it becomes a soft dough.
4. Roll your dough out between 2 pieces of baking paper, do this until it is around 1cm thick.
5. Cut your shapes out and prick each one with a fork.
6. Re-roll your scraps and do the same again, don't re-roll too many times though or you may get greasy biscuits!
7. Pop your biscuits on your baking tray and chill for around 30 minutes at least.
8. Preheat your oven to 160 degrees.
9. Bake your shortbread for around 15 minutes before dusting lightly with caster sugar before putting back in the oven for 5 more minutes. You can dust after taking the shortbread out but I always find the sugar doesn't stick to mine! Your shortbread should be a slightly golden colour when you take them out.
10. Of course leave them to cool before demolishing them. They should be good for about 4 days after baking which is perfect!
