Tequila Cupcakes Recipe

Personally I LOVE Tequila, I have to admit I absolutely hate the taste of cheap Tequila you get from night clubs but if you get some good stuff it's definitely my shot of choice. Obviously when choosing what to make for my friend's birthday I thought alcoholic cupcakes would be a fab idea of course I had no idea how to do it cause do you bake alcohol in or just pour it over and let it seep in? Anyway I ended up making 3 different types of cake and these were my second favourite so instead of waffling I should probably tell you how to make them shouldn't I? 

What you needStandard cake mix/recipe, I always go for 6oz of Flour, Sugar and Stork and 3 Eggs but you can always use shop bought or your usual basic cake recipe.
- 3 Limes
- Icing Sugar
Green Food Colouring
Good brand Tequila. 

What to do 
First up you should probably do a shot of your Tequlia to make sure it's suitable for your cakes and tastes good, obviously do this with a line of salt and a slice of lime.
Now make your cake mix if you're following my standard recipe Cream your Sugar and Stork together before adding your eggs and then fold the flour in.
Bake these in the oven for around 25 minutes at 180 degrees until they're firm to touch and golden brown.
Once cooked and cooled, do another shot for good measure.
Now use a tooth pick or something similar to poke small holes into your cake, now it's time for Tequila, I used about a cap and a half full per cupcake and I won't lie they were quite potent but it's up to you how much you use. I left mine over night for maximum amount of alcohol soaking.
For the frosting
 Mix icing sugar and butter together to taste, I normally just whack it in and hope for the best, but I think it's a 2:1 ratio but don't quote me haha.
Slice one of your Limes into quarters and squeeze one quarters juice into the icing mix along with a cap full of green food colouring. Mix it all together and ice your cakes.
Top them off with little wedges of lime and serve with a sprinkling of salt!

This recipe should make around 12 cupcakes, I apologise for not being a pro and giving exact recipe ingredients and weights haha. Mostly though this recipe was me blagging it and getting drunk while making them! They're perfect for birthday parties, the perfect way to alternately do your Tequila! If you make them you'll have to let me know what you think, they were a bit of an experiment but I think they went down well haha.
